Recipe: Apple Pie...And the secret to a great pie!

My daughter had been begging me to bake an apple pie together.  I finally got the ingredients and we made it on a Sunday afternoon!  Let me tell you, apple pies are SO much work but SO worth it!


I recently got a new baking tool and I wanted to try it out...oh my word!  I have to say that using this tool was the best decision in making the best apple pie I have ever made! It is a Le Creuset Stoneware Pie Bird Funnel. I got mine on Amazon for $12.95 and they have a variety of different colors!


 I had never heard or seen this before even though I guess they have been around a long time.  My opinion:  Game changer!  It was the best apple pie I ever made!

It releases the steam and helps from the crust getting soggy.  No more slits, no more soggy crust and no more pie filling bubbling up and over!

Here's the recipe for apple pie...


Apple Pie


1/2 cup sugar
1/2 cup brown sugar
3 tbsp. all-purpose flour
1 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
6-7 cups thinly sliced peeled tart apples
1 tbsp. lemon juice
Pastry for double crust 9 in pie
1 tbsp. butter
1 large egg white
Additional white sugar

In a small bowl, combine the sugars, spices and flour.  Set aside.  In a large bowl, toss apples with lemon juice.  Add sugar mixture; toss to coat.

Line a 9 inch pie pan with bottom crust.  Fill with apple mixture; dot with butter.  Roll remaining crust to fit top of pie pan; place over filling.  Trim, seal and flute edges.

Beat egg white until foamy.  Brush over crust.  Sprinkle with sugar.  Cover edges loosely with foil.

Bake at 375 for 25 minutes.  Remove foil and bake until crust is golden brown.  20-25 minutes longer.

Cool on wire rack and enjoy!

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
