Homemade Cream of Mushroom Soup and a Paint Transformation

A new week.  A beautiful week here in Florida.  It is hard to keep track of the months and holidays when the weather doesn't change much here.

School - Day 55.  Plugging through the nine weeks.  We will be working on our first tests for these nine weeks.

I made parmesan chicken, hash brown casserole, and peas for dinner.  Sierra commented how just the smell brings her back to the days when people would come over for dinner when we pastored. :)

Tuesday, November 7

Voting day.  We did not have any local elections here in our part of Florida.  I did follow the election in Ohio with that being my home state.  What a sad day it was.  It's a sad day for humanity when we vote to kill the unborn in the name of women's reproductive rights.  I am unashamedly pro-life.  And I am ashamed of my home state.

School - Day 56.  I baked my bread right away in the morning.  Is there anything better than bread baking as you start your day?  Eric went to work in the warehouse organizing their work truck that transports all their materials for their events.  He went in a little later and I got to make him some sunny-side-up eggs with my freshly baked sourdough bread. :)




For dinner, I made homemade cream of mushroom soup which I will post soon.  I love soups.  Who doesn't this time of the year?  A typical canned cream of mushroom soup does NOT cut it.  But a homemade one?  So good!!  Our family loves mushrooms so it is a good one for us!  I then made Rachels or Turkey Reubens to go with the soup.  I used the remainder of the loaf of my sourdough bread to make them and they were fantastic!!  Ever had a meal where you just wanted to savor the flavor?  This was one. :)


I thought I would share some before and after photos of my parent's house.  They recently painted the outside.  It looks so nice!

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
