I made this salad a few years ago for a church picnic and it was delicious! It takes an "OK" side dish of watermelon that may normally show up at a church potluck and turns it into a special, savory side dish that will impress your friends.
So don't go the boring, same dish for Memorial Day - try this!
Juicy Watermelon Salad
8 cups cubed, seedless watermelon (1 medium)
1 small red onion, cut into rings
1 cup slivered almonds, toasted
1 cup fresh arugula/baby spinach
1/3 cup balsamic vinaigrette
3 tbsp. canola oil
1 cup (4 oz.) blue cheese
In a large bowl, combine watermelon and onion; cover and refrigerate until cold, about 30 min. Before serving, add nuts and arugula to watermelon mixture. In a small bowl, whisk vinaigrette and oil - drizzle over salad and toss to coat. Sprinkle with cheese.
