Thanksgiving Recipe: Joanna Gaines' Southern Sweet Potato Casserole

Joanna Gaines' Southern Sweet Potato Casserole

My sister, Rachel, made this recipe for our Thanksgiving meal 2021 and we declared it to be the keeper recipe for all our future Thanksgivings!

Ingredients

5 pounds sweet potatoes

Cooking spray

1 cup sugar

1/2 cup heavy cream

8 tablespoons (1 stick) unsalted butter, at room temperature

1/3 cup whole milk

2 large eggs

1 1/2 teaspoons pure vanilla extract

3/4 teaspoon kosher salt

Topping

1 cup cornflakes, crushed

1/3 cup chopped pecans

3 tablespoons light brown sugar

4 tablespoons (1/2 stick) unsalted butter, melted

2 cups mini marshmallows

Preheat the oven to 450°F.

For the sweet potatoes: Poke each sweet potato a few times with a fork, wrap them individually in foil, and roast until tender, about 1 hour 15 minutes. Remove from the oven to cool, about 20 minutes. Leave the oven on, but reduce the temperature to 375°F.

Spray a 9 x 13-inch baking dish with cooking spray.

When the sweet potatoes are cool enough to handle, peel them and place in a large bowl. Break up the potatoes slightly with a fork. Add the sugar, cream, butter, milk, eggs, vanilla, and salt. Using a handheld mixer, whip the potato mixture until well combined, 3 to 5 minutes.

Scrape the mixture into the prepared baking dish and spread it out evenly.

For the topping: In a medium bowl, mix together the cornflakes, pecans, brown sugar, and melted butter. Sprinkle the mixture evenly over the sweet potatoes and bake until golden brown, about 20 minutes. Turn the oven to broil and position an oven rack 4 to 5 inches from the broiler element.

Sprinkle the marshmallows on top of the casserole and broil until the marshmallows begin to brown and bubble, about 1 minute, watching carefully. Serve hot.

Store in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 10 minutes or in a microwave for 3 to 5 minutes.

Happy 45th Birthday, Eric!

Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
