My sister recently shared this recipe with me which I tried and enjoyed! It is a hearty recipe good for a family and comfort food for fall. :)
Cowboy Casserole
Layer One: Tator tots (1/2 of a 2 lb. bag)
Layer Two: Meat mixture
Layer Three: Shredded cheddar or Colby cheese
Layer Four: Tator tots (2nd half of 2 lb. bag)
Meat mixture:
1 lb. ground beef
1 large onion-diced
1 green pepper-diced
1 packet taco seasoning (I also added extra Cajun seasoning)
1 can red or black beans-rinsed and drained
1 can of diced tomatoes-drained
1 can of green chilies
1 cup frozen corn or 1 can corn-drained
Fry ground beef adding in onion and green pepper. Drain grease. Add in seasonings. Add in beans, tomatoes, chilies, and corn. Heat through.
Layer the casserole and bake at 425 degrees for 25 minutes.
Add a layer of sliced pickled jalapenos and shredded cheese and bake again at 425 degrees for 10 minutes or until tots are crispy.
Serve with sour cream, cilantro, and salsa. Yum!
