Recipe: Whipped Cream Topping

Waffles with strawberries and cream are a delicious and special breakfast!  

Here is a delicious cream that is perfect for a waffle...or honestly cake or any dessert. :)  It is not too sweet which makes it a perfect addition to any sweet food.

Whipped Cream Topping

1 - 8 oz. cream cheese, softened

1 1/2 cups powdered sugar

2 1/2 cups heavy cream

1 tsp. pure vanilla extract

Cream the cream cheese, powdered sugar, and vanilla in a medium-sized mixing bowl.  Add the heavy cream.  Beat on medium-high for 3-5 minutes or until stiff peaks form.

For the strawberries, slice and add 1/4 cup or so of sugar and let sit until it dissolves and creates a liquid.  Drain the liquid and heat 3/4 of the liquid to a low boil in a small saucepan.  Stir in cornstarch to the reserved liquid and add to the boiling liquid and let thicken.  Take off the heat and set aside to cool.  When cool, add the strawberries back to the gel and that will be your strawberry topping.

***I also used this as the topping for my daughter's birthday cakes.  She doesn't care for frosting so this is a great alternative!

You May Abound In Hope

Today I completed a devotional book by Candace Cameron Bure.  100 Days of Joy and Strength.  I was struggling last night.  Darkness seemed to overwhelm me.  The last day of this devotional gave me exactly the encouragement I needed to go another day. Here are the verses she shared from God's Word. "I wait for the Lord, my whole being waits, and in His word I put my hope."  Psalm 130:5 "We are afflicted in every way, but not crushed; perplexed, but not driven to despair; persecuted, but not forsaken; struck down, but not destroyed;"  II Corinthians 4:8-9 "As for me, I watch in hope for the Lord, I wait for God my Savior; my God will hear me.  Do not gloat over me, my enemy!  Though I have fallen, I will rise.  Though I sit in darkness, the Lord will be my light."  Micah 7:7-8 "I remain confident of this; I will see the goodness of the Lord in the land of the living.  Wait for the Lord; be strong and take heart and wait for the Lord."...
