Jammie Day for Me

Saturday, December 7

Today was a quiet day.  Eric was on a work trip to Chicago and Nashville.  Summer was dog-sitting in St. Augustine.  Sierra and I worked on school in the morning.  Then she had to leave a little after noon.  She went on a college church activity that the senior class was also invited to go along.  They were having a scavenger hunt, going out to eat, and seeing the Nights of Lights in St. Augustine.

It has been extra chilly lately!  And I NEVER do this but I stayed in my pajamas all day.  I got ALOT done but it was just nice to be in pajamas for the day.

The kitties helped me work on school with Sierra, grading, and planning.

Helping and napping that is.

Autumn got her date for the play she is going to be in!  March 29, 2025!  I can't wait to go!

After she left, I made the three beds for the sleepover, vacuumed the room and took out the garbage.  I did the few dishes and wiped down the girls' bathroom.

I registered Summer for drama camp this summer at Pensacola Christian College.  I know it seems early but I want to get it done.  I also began my registration for Arise Youth Conference.  This is a youth conference I wanted to take the girls to last year and we couldn't make the dates work.  This year, no excuses.  Registering early bird this year!

I also FINALLY purchased the Litter Robot 4.  This is an automated litter machine for our cats.  I don't mind at all doing the litter box.  But I have really wanted to purchase this for the times that we are traveling.  I have to have someone come by every other day when we are gone.  This will enable the cats to be by themselves while we are on trips.  So in the long run, it will pay for itself.

Always so much to do, so many plans to make, do many details to work out.

Of course, you know I watched a couple Christmas Hallmark movies while I multitasked. :)

Sierra got home around 9pm with two friends, Salah and Aubryn.  They asked if they could have a sleepover after the activity.  Then ride with us to church the next morning.  I went to bed (the cats are pretty shy around others so they came to bed and slept with me all night) and the girls stayed up a little longer.

Happy 45th Birthday, Eric!

Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
