My Trip to Phoenix-May 2025

 Saturday, May 3

At 9:30am, I flew out to Phoenix.  Our May Aspire is in Phoenix so I asked if they could fly me out a day early so I could visit with my sister, Rhoda and her family.  My first flight was held up waiting for a flight attendant.  That made our arrival late.  By the time we were landing, my next flight had begun boarding.  I wanted to at least try to make that flight so away I ran through the airport!  The door closed at 11:10.  I made it at 11:09am!  WHEW.

My second flight was very nice with a window seat, lots of sunshine and no one in the middle seat.

When Rhoda picked me up, she took me to lunch at a little Chinese place.  I got orange chicken and it was very good!  Then we went to her MIL's house to do some cleaning for a guest from their church.

We made meatloaf, potatoes, and brussel sprouts for dinner.  And played Dutch Blitz with the kids. :). Then a lot of talking after dinner.

Sunday, May 4

I went to Josh and Rhoda's Sunday School class at 9am.  I sat in the singing part of the service and after Rhoda played the piano for the choir special, we went to the junior high class where Josh had the service.  After church, Rhoda stopped at The Joint so I could get adjusted.  I have been having terrible headaches due to my neck and shoulders.  We made green chicken enchiladas for lunch.  Then it was back to church by 4:40pm for choir practice.  I sat in the practice while Rhoda played.  Then the evening service.  After the service, Rhoda drove me to our hotel and dropped me off.

Monday, May 5

Monday was our set up day for Aspire.  It went very well. After we finished set up, we drove out to Josh and Rhoda's house to visit.  We had brownies and ice cream and talked for several hours. :)



Tuesday, May 6

Tuesday was our event day for our Phoenix Aspire event.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
