Another Car Breakdown


Tuesday, December 2

Today was an interesting day.  I did school with Summer - we did a couple tests together and I did some grading.  Sierra worked from 8-4pm.

I had run to Target to get kitten food.  When I came back, I could smell a burning smell.  I checked the coolant level and it was totally empty.  I filled it and we took off for Summer's horse riding lesson.  We were on the toll road when it completely overheated.  We pulled over with no options.  Eric was still on his way home from work and Sierra was home but had no vehicle.

A roadside assistance person stopped and gave us water.  But it only got us to the next exit and back to the same place on the other side of the toll road.  Eric brought us coolant and we made it home.  Barely.  I called a tow truck right away and had it towed to the auto repair shop.

So not a fun ending to that day.

Wednesday, December 3

I had many things going on these next three days so I decided to rent a vehicle.  Ugh.  More expense.
I had Eric drop me off on his way to work.  I got to the place 30 minutes early and had to wait until it opened at 8am to get my rental.



They gave me a car with 8 miles left on the gas tank.  Wow.  Some places just don't care.

After I got home, I took Sierra to work at 9am.  Then brought all the kittens to a medical appointment at the Jacksonville Humane Society.  They are looking much better and the panleukopenia is clear now.  I did get eye drops for Slate's eye.


They gave them their vaccines so I won't have to come back for the weekend visit which is good.  They are also at surgery weight now - over 2 lbs. each - so they scheduled their drop off date as well.

I did some good cleaning in between.  Sweeping, vacuuming, and mopping.  All trash and cleaned two bathrooms.

I picked up Sierra from work at 3pm and then dropped her off at 4pm for her Bible study.

I made cheddar brats and ranch pasta salad for dinner then off to choir practice at 6pm.


Aren't you glad this Christmas season we have the true reason for the season?  I am!

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
