Bacon Cheeseburger Rice
This is a new recipe I recently tried that I am putting in my keeper file! It is very husband and kid-friendly. Be sure to add lots of pickles on top - it makes the dish unique and so tasty!
Ingredients
1 pound ground beef
2/3 cup barbecue sauce
1 tablespoon prepared mustard
2 teaspoons dried minced onion
1/2 teaspoon pepper
2 cups uncooked instant rice
1 cup shredded cheddar cheese
1/3 cup chopped dill pickles
5 bacon strips, cooked very crisp and crumbled
Directions
1. In a large skillet over medium heat, cook beef until no longer pink; drain.
Cook the rice as directed.
Add the barbecue sauce, mustard, onion, pepper and bacon to the beef. Stir in rice.
2. Transfer to a baking dish. Sprinkle with cheese. Heat through in the oven.
As you serve, top with chopped dill pickles.
***I doubled this recipe for our family of 6.
