Here is my favorite white chili recipe...and it is a keeper for me! It is delicious! Don't forget to add the toppers on it...that is the best part.
White Chicken Chili
2 boneless, skinless chicken breasts, cooked thoroughly and diced
1 onion, chopped
4 cups chicken broth (2 cans) (Can increase to 6 cups)
1 tsp. cumin
1 1/2 tsp. chili powder
(I substitute my homemade Cajun seasoning for the cumin and chili powder)
3 jalapeno peppers, chopped
2 cans cannellini beans (15 oz. each), rinsed and drained (Can increase to 3 cans)
Lime juice (liberally)
Toppings:
Sour cream
Shredded cheddar cheese
Chopped cilantro
Place all ingredients into a pot. Bring to a boil then lower heat and simmer for 15 minutes.
When serving, top each bowl with shredded cheddar cheese, a dollop of sour cream, and chopped cilantro.
It makes each bowl simply divine!
Meal idea: Serve with quesadillas to round out the meal.
