Wonderful November Days

Tuesday, November 19

Today was a quiet day.  I was able to work on school work.  Grading, prep and giving Sierra and Summer quizzes and tests.  Can you believe we are over halfway through November?  I really want to stay on track to get done with this nine weeks before Christmas vacation.  With our busy schedule, we may not be able to do that but we will just do our best.

A memory that popped up recently.  Sisters. :)


I downloaded photos off my phone and updated some blog posts.  I do this in the morning.  Once I start on other things, it seems I never get back to it.  So I do it first thing in the day.

Summer wanted to make dinner - a recipe she found.  Sheepherder's Breakfast.  It was good and I love that she loves to cook and bake.

I took Summer to her horse riding lesson at 5:30pm.  Autumn called and we talked for 2 hours!

Wednesday, November 20

What a warm and humid day!  I almost turned on the AC but I knew the temps would drop that night so I didn't.  I fed my starter and made a batch of sourdough.
I did my regular housework.

Autumn got a part in one of the college plays!  SO excited for her and can't wait to come and see it!

I did feel in slow motion today.  Probably the heat and humidity.  

Sierra left to be at the church at 3:30pm.  She was helping for the church Thanksgiving dinner as part of the Student Leadership Team.

Summer and I went to the church at 4:30pm.  There was a Thanksgiving meal - turkey, ham, mashed potatoes and gravy, stuffing (or dressing as they call it here in the south), green beans, a roll, banana or chocolate pudding and sweet tea/lemonade.

I then had practice with the Praise Team at 5:20pm.  We had our Family Worship Hour at 6pm. This is a quarterly service we have.  Here is the link to watch it if you would like.  I enjoyed so much singing on the Praise Team.  My husband took this photo while we sang. :)

Pastor Keith gave a message on Paul and thankfulness.  Then we had the Lord's Supper.

After the service, we had choir practice to run through all our upcoming Christmas songs for December 22.  

It was a busy evening but I enjoyed it very much!  I am so thankful for this church.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
