Chili, Apple Pies and Sourdough


Sunday, September 7
Today was Heroes Day at church.  We had Connection Group and church.
Summer had worship band practice at 4:30pm and youth group at 5:30pm.

Monday, September 8
Ha!  I found this destruction from my foster kittens.  They are crazy!
School - Day 20
Sierra worked 4-8pm.


Nugget had her annual exam and yearly vaccines.  Her appointment was at 2pm at Pet Angels.
I made parmesan chicken and mac and cheese for dinner.

Tuesday, September 9
School - Day 21
Sierra worked from 11-3pm.




I made a new recipe - Caprese chicken with parmesan coucous.
I then took Summer to her riding lesson at 5:30pm.

Wednesday, September 10


Love my sunnyside up eggs with sourdough!


My husband did a master crypto class today.  It went from 9-4pm and was excellent!  I am so proud of his knowledge and growth in this area.  Great job, babe!


I spent the day, as I have been, studying for my Wednesday night class.
School - Day 22.
Sierra worked 8-2pm.
I also did laundry.
I made chicken-broccoli-stuffing casserole for dinner.
That evening, the girls went to choir practice and I taught my Everyday Theology class.


Always enjoy the beautiful sunset on my way home after my class is finished after one more week.


Autumn's birthday gift - I just love it!


Thursday, September 11
Not sure how your day looks when it starts off like this.  Ha!!


I took Eric to the airport for his flight at 11:17am.
School - Day 23.
Sierra worked 4-10:30pm.


I made a new recipe and boy, did I like it!

At 4:30pm, I took Summer to American Heritage Girls.

Friday, September 12
School - Day 12
I went to the chiropractor.
Then I worked on completing the school week!


And finally made that apple pie!








Such a happy feeling!

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
