Winter Weather and More

 Monday was just a normal day.  School and housework.  A good thing - the gyms have opened back up with limited capacity!  I was able to take an hour, work out and also use the tanning bed there.  I have always enjoyed this for my personal health and am grateful it is again available!

For dinner, I made Easy Pork Posole.  Now, I don't know what authentic pork posole is really - but I do know I enjoy this recipe and I think you will too. :)  It is a crockpot recipe which is always a plus and it is just plain flavorful!  Serve with corn tortillas or tortilla chips.

Then we had a little time just hanging out together watching old home videos and talking.  Clean up the kitchen, make Eric's lunch for the morning, talk with the hubby and off to sleep.

Tuesday, man, it was hard to wake up today.  Felt like I got a late start to the day but that's ok sometimes.  Summer and I went to Winco and got the grocery shopping done.  It turned out to be a beautiful, clear, sunny day.  Which we really needed!  

Made Slow-Cooker Layered Enchilada Dinner along with a salad for dinner.  Again, always nice to use a crock pot recipe for dinner so it is done early.

Wednesday, was another normal day.  Ok, there's just not much going on on a normal day.  Ha!  Basically school and home stuff.  I made meatloaf for dinner along with baked potatoes and salad.  Mmm!  Meatloaf is one of my favorites and you have to hide any leftovers in order to get any.  I use Joanna Gaines' recipe for meatloaf which I will share this week.



A lot of precipitation this week!  Rainy Thursday until later in the day and it turned to freezing rain.

Awana and Youth Group was cancelled Thursday due to freezing rain.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
