The Rachel Sandwich (AKA: Turkey Reuben Sandwich)
A twist on the classic Reuben sandwich made with deli turkey, sauerkraut, tangy Thousand Island dressing and swiss cheese slices on rye. Corned beef can be pricey so these are a great alternative for larger families.
I like to make these up - warm all at the same time in the oven and are ready to serve to my family with a hot bowl of soup for dinner!
Ingredients:
1 tablespoon butter/margarine
2 slices rye bread
1 slice Swiss cheese slice
3-4 slices deli turkey
1/4 sauerkraut, slightly drained
1-2 tablespoons Thousand Island dressing
Heat a non-stick pan over medium heat. Butter the outside of each slice of bread - layer Swiss cheese, turkey and top with sauerkraut. Spread dressing on the inside of the top slice and place on top of sandwich.
Grill for a few minutes on each side. Place on a baking sheet and heat through for 10-15 minutes in oven at 375 degrees.
