My sister has this cookbook by Joanna Gaines and shared one of her recipes that they enjoy. I love kale in soups - it holds up much better than spinach.
Sausage and Kale Soup
1 tbsp. oil
smoked sausage - 14 oz. cut into slices and cut slices in half
1 stick butter or margarine
1 large onion, diced
1 lb. red potatoes, diced
2 carrots, peeled and diced
4 celery stalks, diced
1/4 cup flour
8 cups chicken broth
salt and pepper
8 cups of kale
In a large soup pot, heat the oil and brown the smoked sausage. Remove sausage with a slotted spoon and set aside.
Add the butter to the pot - add in the potatoes, carrots, onions and celery. Cook about ten minutes - until vegetables are softened. Stir in the flour to the mixture.
Add the broth, salt, pepper and sausage. Increase the heat to medium-high and bring to a boil. Reduce the heat and cook until vegetables are tender - about 30 minutes.
Stir in the kale and simmer - about five minutes - until kale is cooked/wilted.
