This is a delicious meatless dish that you will enjoy!
My daughter who does not like tomatoes will have seconds of this dish.
Try it today - yum!
Baked Feta Pasta
8 oz. cavatappi pasta (or something like elbow)
2 pints cherry or grape tomatoes
8 oz. block feta cheese
1/2 cup extra virgin olive oil
1/4 tsp. sea salt
1/4 tsp. pepper
2 garlic cloves, minced
1/4 cup chopped fresh basil
Preheat oven to 400 degrees. Place the tomatoes in a baking dish. Pour olive oil over top and season with salt and pepper. Toss until well combined.
Place the feta block in the middle of the dish surrounded by tomatoes. Flip a couple times to coat with olive oil and seasonings.
Bake for 35 minutes until the cherry tomatoes burst and the feta cheese melts.
While the tomatoes and cheese are baking, boil the pasta to al dente. Drain.
Add garlic, basil, and pasta to tomatoes and cheese. Toss until well combined.
Serve.
*We serve with garlic breadsticks and broccoli.
