This is a salsa recipe by Ree Drummond-The Pioneer Woman. It is a recipe in her cookbook that a church member gave me years ago. I made it and the family liked it! Super easy and you can adjust the heat factor according to your family's taste.
Chipotle Salsa
two 15 oz. cans diced tomatoes
10 or 15 oz. can diced tomatoes with green chilies
1 medium onion, diced
1-3 chipotle peppers packed in adobe (depending on your heat tolerance-I used 3)
1 tsp. ground cumin
1 tsp. salt
1/2 tsp. ground pepper
1 tsp. sugar
1 bunch of cilantro, stems roughly removed
1/4 cup lime juice
Blend (blender or food processor) until combined.
*Chipotle peppers are very spicy. Start with one and go from there if you're not sure about how many to use.
