Recipe: My Chick-Fil-A Inspired Salad

Here is my version of a Chick-Fil-A-inspired salad you can make at home.  It is perfect for a hot summer day's dinner.

Chick-Fil-A Inspired Salad

romaine lettuce (1 heart per two salads)

cherry tomatoes (6 per salad)

shredded cheddar cheese

diced cucumber

red onion

bacon (1 1/2 slices per salad cooked and crumbled)

avocado (3 slices per salad)

Top each salad with five homemade nuggets.  Easy to make!

Homemade Chicken Nuggets for Salad

Take a chicken breast and cut it in half to make it thinner.  Slice each half chicken breast.  Dip those pieces in Chick-Fil-A sauce!  So easy and so flavorful!  Coat with Italian bread crumbs.  Fry on medium heat in canola oil until breading is crispy and the chicken is cooked inside.  

Lastly, make your own honey mustard dressing to top your salads!  Again, so easy and much better than store-bought.

Homemade Honey Mustard Dressing

1/4 cup Dijon mustard

3-4 tbsp. honey

3-4 tbsp. apple cider vinegar

1/4 cup olive oil

1 tbsp. lemon juice

1/4-1/2 tsp. sea salt

1/4 tsp. freshly ground pepper

Whisk together until creamy.  Leftovers can be stored in the fridge for up to 4 weeks.

You May Abound In Hope

Today I completed a devotional book by Candace Cameron Bure.  100 Days of Joy and Strength.  I was struggling last night.  Darkness seemed to overwhelm me.  The last day of this devotional gave me exactly the encouragement I needed to go another day. Here are the verses she shared from God's Word. "I wait for the Lord, my whole being waits, and in His word I put my hope."  Psalm 130:5 "We are afflicted in every way, but not crushed; perplexed, but not driven to despair; persecuted, but not forsaken; struck down, but not destroyed;"  II Corinthians 4:8-9 "As for me, I watch in hope for the Lord, I wait for God my Savior; my God will hear me.  Do not gloat over me, my enemy!  Though I have fallen, I will rise.  Though I sit in darkness, the Lord will be my light."  Micah 7:7-8 "I remain confident of this; I will see the goodness of the Lord in the land of the living.  Wait for the Lord; be strong and take heart and wait for the Lord."...
