School - Day 14
Some days you try to keep up but just need a little nap.  I laid down and funny enough, Jackson came right over to sleep with me.  He is not a cuddler but he does like to be close to people.  He has never done this but I loved it!

 


This is what it looks like at night when Nugget comes to "wake" me up and make biscuits on my head!  Ha!



Of course, during the day, she looks so cute and sweet!  Little stinker.


I made Salisbury steak, mashed potatoes and pickled beets for dinner.  I actually got my office cleaned (well, mainly my desk area!).  That felt good.
I went to Walgreens to drop off a Fed Ex return, to the library to pick up a hold, and to Aldi.
I finished the school paperwork for the scholarship.

At 4:30, we had our American Heritage Girls club meeting.  This is a new club that we joined for connection and growth.  American Heritage Girls is similar to Girl Scouts but it is faith based. I hope it will be a blessing to my girls and provide growth in their lives.
From there, the girls went to soccer practice at the church.  Busy day!

Friday, August 30

Had my devos in the morning, fed my starter, did some blogging and cleared out my emails.  A good start to the day!
Called the dentist and rearranged a couple appointments for cleanings.

Summer has a cooking and baking blog.  I love seeing her create and have fun doing it. :). Check it out!



Making sourdough today.  My starter is almost a year old!  I have loved learning how to make sourdough bread and experimenting here and there.  So fun!
I then went to the chiropractor for my weekly visit.
Stopped at Chick-Fil-A for a freebie - a grilled egg white chicken breakfast sandwich.  Mmm!


Somewhere in here are Autumn and Kylee. :)


Well, Summer's jello had a little flop to it but it still tasted good. :)


I love how the centerpiece turned out!  We worked on school for most of the day and it just makes it more pleasant in a pleasant environment.  Candle burning, fresh flowers (a dozen yellow roses for $10!), and a pretty fall centerpiece.

I guess Jackson didn't mind being her pillow.  She is still adjusting to the school schedule and I think just growing. :)




Nugget is NOT a cuddler but this made me smile.  I think she loves me.


Guess what FINALLY came in!  My new Macbook Air.  I don't think I have ever bought myself a new laptop.  I always got Eric's hand-me-downs.  So I am really enjoying this!  It took an entire paycheck from working the last Aspire but it is worth it. :)

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
