My sister gave me this recipe to try and it is delicious!
I shared a chicken gnocchi soup recipe last week - this is a nice variation of another gnocchi soup. I posted this back in 2015 on my blog but it is worth sharing again to add to your fall/winter recipe collection.
Gnocchi, Sausage and Spinach Soup
1 yellow onion
1 jar roasted red peppers, diced
1 pound sausage
4 cloves of garlic, minced
1 tsp dried basil
32 oz. chicken broth
1 pound potato gnocchi
2 cups fresh baby spinach
3/4 cup half & half
fresh basil
Parmesan cheese
In a saucepan, saute the onion and red pepper in olive oil over medium-low heat until tender. Season well with salt and pepper. Add garlic. In a separate skillet, brown the sausage and drain. Add to onion mixture with basil and chicken broth. Simmer for 20 minutes.
Add gnocchi and spinach, bring to a simmer, and cook until the gnocchi puffs up and starts to float. Add half and half, and bring to a simmer for 3-4 minutes.
