Sweet & Sour Sauce
1 cup canned pineapple juice
3/4 cup packed light brown sugar
1/3 cup rice vinegar OR apple cider vinegar
3 tbsp. ketchup
2 tbsp. soy sauce
Cornstarch thickening: 1 1/2 tbsp. cornstarch dissolved in 2 tbsp. water
Place all ingredients, except cornstarch mixture, in a small saucepan and bring to a boil. Stir in the cornstarch mixture and simmer for another minute until thickened, stirring constantly. Let sauce cool and store in airtight container in fridge for 2-3 weeks.
