Beautiful October Days

This was a busy day!  Eric was home in the morning since he was flying out that morning.  I did my normal morning chores.  Dishes, counters, made the bed, showered, devotions, etc.  

I called the Laguna Hills Dept. The situation is three years ago, I sold my father-in-law's vehicle to a college-age man and his dad.  I left the plates on and I shouldn't have.  I should have said I would meet him at the DMV to transfer the title.  I didn't know to do this and will never make this mistake again.  The kid never put the title to the car in his name and never registered the vehicle.  The registration is two years expired and this kid is still driving it like that!  He received tickets for this but because it was never put in his name, the ticket went to me and Eric.  I mailed the paperwork from the Oregon DMV to the office that said I sold the vehicle.  I PRAY that this will clear it up.  I can't believe someone is so irresponsible to have done this.  There is basically nothing I can do because the title is still in my name.  

I also checked on a ticket that Eric recently got (when he had the accident).  He had to do a driver's safety class online and I wanted to make sure the DMV received that information that the class was completed.

I also submitted a new receipt for a reimbursement that was on hold for horse lessons under the school scholarship.

Then I browsed FB marketplace for a mower.  I found one that was just listed and set up to go look at it after I went to the airport.  I did go and bought it for $180!  It is a Honda as well which was our former mower.  Great shape and you could tell the guy takes care of his things by the way his property/home was.  I am SO grateful to God that He helped me to find this mower and be the first to contact him and was able to buy it!

Friday, October 18

It is Friday!  This week was full and went quickly!  Eric is at an event in Phoenix today.  Sierra works at Chick-Fil-A from 8am-2pm.  Summer will be doing her school day - today is Day 46.

I fed my starter and made sourdough dough.  It was a cool start to the day - 51 degrees!  It will get to 76 degrees though - a beautiful day!

Summer made a birthday meal for Sierra and we celebrated more. :).

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
