Plugging Through the Week


Monday, March 24

My week didn't start off very normal. Usually Monday is my reset day.
 We have been home schooling with Abeka for 17 years.  I have always submitted the girls' grades via mail.  I decided to submit Sierra's electronically this third nine weeks.  Since Sierra is graduating, her third nine weeks' grades had to be submitted by a deadline, so I decided to submit them electronically.  However, being my first time, I uploaded them incorrectly and didn't realize it.  This resulted in failing grades for Sierra's third tests because they did not receive the entire test.
I called customer service to straighten it out.  I wasn't able to make any headway.  It appeared that perhaps my mistake was going to affect her grades and that had me so distraught.  I was in tears most of the day.

There wasn't much else that I got done.  I made shepherd's pie for dinner.  And prayed a lot.

Autumn did send us this in the mail which brightened my day.  It is for the play she is in.





Tuesday, March 25

This day didn't begin too much better than Monday did.  I had an appointment for my TSA precheck.  This is where you get to be in the expedited line when you fly.  It was at 9:20am.  I showed up early to my appointment only to be told I needed my marriage license which I didn't bring.  It was quite the drive there and back so I was very frustrated.  Sigh.

On the way home, I got two of my birthday freebies redeemed.  A dessert from Cracker Barrel - peach cobbler and breadsticks from Pizza Hut.

When I got home, I called Abeka again.  I did not have any results from this call.




At 5:30pm, Summer had her horse riding lesson.  At least the weather was gorgeous and I enjoyed being outside.

  I made jambalaya for dinner.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
