Bible Conference, Belle and Bible Studies

School - Day 117.  Eric took a day off and did some work from home as well.

Sierra worked 8-4pm.

What is more special than this?  Nothing. :)


I made two new recipes for dinner.  These are two recipes from Joanna Gaines' cookbooks.  Chicken parmesan - now I make a simple parmesan chicken - this one was so delicious!  Chicken parmesan will probably always be my favorite way to eat chicken. :). 

I also made cacio e pepe.  I know, what even is that?  Ironically, I didn't know but Summer knew exactly what it was.  That cracked me up.  She is so much more advanced in her cooking skills and knowledge than I am!  It is basically pasta seasoned with butter, parmesan cheese and pepper.  I thought it was a good side with the parmesan chicken.

Once a quarter, our church has Family Worship Hour on Wednesday night.  Our normal Wednesday nights are various adult Bible studies, Connect Kids for grades 1-5, nurseries/preschool, choir and orchestra practice and discipleship class for teens.  Once a quarter, we all come together into the auditorium and worship together as a church family.  We also observed Lord's Supper together.  This was our night for this.

School - Day 118.

Sierra took her CLT exam.  This is an alternate test like the SAT and ACT.  It is taken online in your home environment.  Another check off our to do list.


I earned a $20 Amazon gift card by giving blood.  This Lodge brand cast iron pan was on sale 42% off.  I have wanted to try my hand with cooking with cast iron so this is what I got.  Perfect size and price!

Made a homemade alfredo sauce in my new cast iron pan. :)

I made a new recipe from one of my Joanna Gaines' cookbooks - white chicken alfredo lasagna.  I do enjoy cooking and I like her recipes.

Then it was off to American Heritage Girls at 4:30pm.  I was able to talk to Autumn during the afternoon and I enjoyed catching up with her.

From AHG, Sierra and Summer went to youth choir tour practice at 6:30pm.

Today was the five year anniversary of Belle going to Heaven.  I love you, Belley Belle.  I know you are chasing squirrels in Heaven. :)


Our friends, Dave and Mia Abberger, visited the college during Bible Conference.  It is always kind when a friend takes care of your kids when you are away.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
