School - Day 102
Eric had an early arrival home at 1am this morning.  So he worked at home for this day.
We were able to go to the chiropractor together.  I am so grateful for Doctor Kelvin.  He is an amazing and skilled chiropractor.


Second book finished in January.  The Teacher of Warsaw.  A fiction book set back in the ghettos during the Holocaust.  Very good.


I made copycat KFC bowls for dinner.
Then it was off to take Summer to her riding lesson.  I got my steps in while waiting.


She always makes me happy. :)

Wednesday.  Eric is back at the office.  Honestly, it is easier for me to get things done around the house when he works from the office and not home. LOL!
And...winter is leaving Florida!  Hooray!!  Today was a beautiful day.  And with the warmer weather comes the lizards.  Nugget was back at it hunting away!



She cracks me up!  She catches the lizard, brings it in the house and then it gets "lost" in her fur.  LOL!

School - Day 103.  Sierra worked from 11-3pm.  Choir practice at 6pm.

I made salisbury steak, roasted red potatoes and brussel sprouts for dinner.

Thursday, January 30

Today was a normal day.  I took Eric to the airport in the morning.  Day 104 of school.  Sierra worked 8-3pm at CFA.

In the evening, we had AHG from 4:30-6pm and the girls had Youth Choir Tour practice from 6:30-7:30pm.

We had leftovers for dinner.

Friday, January 31

I didn't want to run errands today but I pushed myself and I am glad I went.  Can't complain about the weather!



They say there is something about getting sunshine right away in the morning.  It releases cortisol and helps improve your energy and mood.  I did my Bible reading out in the garage so I could enjoy those first rays.


I went to the chiropractor.  While I was in that area, I went to Home Depot.  Ours was out of some of their garden plants but this one was fully stocked!  Yay!!

I also went to a supplier called Site One that our chiropractor told us about.  They gave me a preemergent to put down on our lawn to hopefully prevent any further weeds from coming up this winter.


Stopped at Bath and Body for a free travel item. :)


Did couponing at CVS.


Yes, I am glad I made myself go!  Sierra worked from 8-3pm and we did Day 105 of school.  We had lemon rice soup and deluxe grilled cheese for dinner.
In the evening, Summer went to Teen Time at the church from 6-8pm.


Silly boy.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
