Copycat KFC Bowl

This is tasty comfort food that you can make at home!

Easy and kid-friendly.

3 lbs. russet potatoes

1/2 cup butter

1 cup milk

1/2 tsp salt

1 tsp pepper

1 pkg popcorn chicken - 24 oz.

1 bag frozen corn - 12 oz.

1 jar Heinz chicken gravy - 18 oz. divided

2 cup shredded cheddar cheese

Instructions

  • Clean and peel the potatoes. Then quarter them.

  • Place the potatoes in a large pot and cover them with water. Bring to a boil and simmer for about 10-15 minutes until the potatoes are fork-tender.

  • Bake the Popcorn chicken based on the package instructions while the potatoes are boiling.

  • Drain the potatoes and then return them back to the pot.
  • Then add in the butter, milk, salt and pepper. Use an electric mixer to blend the potatoes until they are light and fluffy or use a hand masher to mash them to the consistency that you prefer.

  • Heat the chicken gravy in a small saucepan over medium-low heat for approximately 5-7 minutes, stirring often.
  • Steam the corn in the microwave based on the package instructions.
  • Then it’s time to assemble the bowls.  Evenly divide the mashed potatoes into 6 bowls.  Sprinkle each bowl with 1/3 cup of cooked corn and pour the gravy on top evenly.  Then top with the popcorn chicken and the shredded cheese.
  • Serve immediately while hot and enjoy!

Notes

Only assemble the bowls that you are going to serve.  Store the leftovers individually in separate airtight containers in the refrigerator for up to 5 days.

You May Abound In Hope

Today I completed a devotional book by Candace Cameron Bure.  100 Days of Joy and Strength.  I was struggling last night.  Darkness seemed to overwhelm me.  The last day of this devotional gave me exactly the encouragement I needed to go another day. Here are the verses she shared from God's Word. "I wait for the Lord, my whole being waits, and in His word I put my hope."  Psalm 130:5 "We are afflicted in every way, but not crushed; perplexed, but not driven to despair; persecuted, but not forsaken; struck down, but not destroyed;"  II Corinthians 4:8-9 "As for me, I watch in hope for the Lord, I wait for God my Savior; my God will hear me.  Do not gloat over me, my enemy!  Though I have fallen, I will rise.  Though I sit in darkness, the Lord will be my light."  Micah 7:7-8 "I remain confident of this; I will see the goodness of the Lord in the land of the living.  Wait for the Lord; be strong and take heart and wait for the Lord."...
