Exploring our Metroparks: Biking Secor and Swan Creek

Most of the parks have at least one or more bike trails in it.  We decided to try two at Secor and Swan Creek Metroparks.  Biking was a lot of fun and we enjoyed it!
6.84 miles

For dinner that evening, I made grilled chicken with a peach cucumber salsa.  So refreshing!

Grilled Chicken with Peach-Cucumber Salsa

1-1/2 cups chopped peeled fresh peaches (about 2 medium)
3/4 cup chopped cucumber
4 tablespoons peach preserves, divided
3 tablespoons finely chopped red onion
1 teaspoon minced fresh mint
3/4 teaspoon salt, divided
4 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon pepper

For salsa, in a small bowl, combine peaches, cucumber, 2 tablespoons preserves, onion, mint and 1/4 teaspoon salt.
Sprinkle chicken with pepper and remaining salt. On a lightly greased grill rack, grill chicken, covered, over medium heat 5 minutes. Turn; grill 7-9 minutes longer or until a thermometer reads 165°, brushing tops occasionally with remaining preserves. Serve with salsa.

I did rice pilaf on the side and it was a delicious summer meal!

Exploring our Metroparks: Toledo Botanical Garden

I wanted to share photos from our outing to the Toledo Botanical Gardens.  It is one of our local Metroparks.

Many beautiful flowers in bloom.

I just love lily pads!

They have a really nice play area for kids.

Cabin replica.

Garden by the cabin.

So pretty. :)

After our outing, we came home and the hubby had caught and cooked us up some delicious walleye he caught in Lake Erie. :)
