Menu Ideas for your Week

The weather continues to be so nice!  I am having a hard time keeping my kids inside to get their work done. :)
What are you cooking up this week?

Here are some menu ideas from our house:

On Friday, we had a church family over for dinner.  This is the meal I made...it is probably one of my absolute favorites.  The chicken is just the best!

Parmesan Crusted Chicken
Copycat Cracker Barrel Hash Brown Casserole
Corn
Paula Deen's Crock Pot Mac and Cheese

The weather was absolutely gorgeous on Saturday!  We went hiking and then I did some things outside - watered the trees, cleaned the grill.  Then grilled some hamburgers for dinner - isn't grilled food just so good??  And being outside in the beautiful weather makes it taste even better.

Hamburgers
Ranch pasta salad

Since we were having a Super Bowl church party at 3:30pm on Sunday, I just did meatball subs for a quick lunch to tide us over until the game.  Meatball subs are great for Sunday lunch because you cook them in the crockpot and then just broil them when you get home for a minute or two.

Meatball Subs

I have said this before but this is a family-favorite!  Sierra just said this week...this is one of my favorite meals!  LOL!  Sounds weird but it is pretty good.

Tator-topped dogs
Tator tots

Spaghetti
Green beans
Garlic bread

My Chili
Cornbread

Grilled chicken sandwiches
Steak fries

For our Super Bowl church party, I made:
Gumbo Meatballs
Lil' Smokies

These two recipes are crowd pleasers and are super simple to prep.  They cook in crock pots and that made them perfect for the day with church and doing a blood drive.

Menu Ideas for your Week

We have been enjoying all the beautiful warm weather here in Reno!  It makes me want to get a screen door for my kitchen to be able to open it up when I'm cooking. :)

Here are a few menu ideas for your weekly meal planning:

Pioneer Woman Quiche
*I love quiche and thought I would try Ree's recipe - yum!

Tacos
Refried beans
*I could eat tacos every week.  Sometimes, we do!  LOL!

Salisbury steak
Mashed potatoes
Corn
*I just use the frozen Salisbury steak...it's one of my childhood favs.  I short cut the meat on this meal mainly because I like the taste :) but I always make real mashed potatoes though!

Chicken-Broccoli-Stuffing Casserole
*One of my favorite casserole dishes.

Blueberry pancakes
Bacon
*We don't eat breakfast together so I like to have breakfast for dinner once in awhile.

Pioneer Woman-Coconut Curry Shrimp
Rice
*I loved the fresh basil in this one!

Mac and cheese with hot dogs
Peas
*Easy peasy.

Happy Cooking!
