Busy November Days

Boy, where did this week go?  Sure went fast and here it is already halfway through Saturday again.  I sure am getting my fill of fog living here in Oregon.  LOL!  I have always loved fog though so I really like it. :)

Last Friday, Nov. 21...just a normal day of school and such.  I made a breakfast casserole for dinner.  I don't make many family breakfasts so sometimes I throw a breakfast meal in for our dinner meal. :)  This one is Hearty Breakfast Egg Bake.  You can find the recipe on my old blog with this link.  It is one of my favorite breakfast casserole recipes.

Saturday, we had a nice surprise!  A neighbor brought over a Thanksgiving/Welcome New Neighbor gift.  Godiva chocolates, a poinsettia plant and a card.

We stayed busy Saturday - we took a run to the transfer station (dump-LOL!).  We needed to get rid of the fencing that we replaced and an old bunk bed set and mattress.

For dinner, I made crockpot chicken tacos.  I hadn't tried these in a long time and I decided to downsize the recipe.  It called for 6 chicken breasts but I only used two - which doesn't sound like a lot for six people but it was plenty and we even had leftover.
Here is the original recipe on my old blog - crockpot chicken tacos.  You can downsize it easily.  Good for a busy Saturday or even Sunday lunch.

Addie got her hair cut Saturday and asked if I would dye her hair for her Saturday evening.

This dog looks like he has a hard life.  Ha!

Sunday morning, we went to the early service at Calvary Chapel here in Newberg.  It was a beautiful service and great sermon - we really enjoyed it!  Everyone was so very friendly.

Sunday lunch was chili with bread on the side.  Good for a rainy Oregon day!

Sunday afternoon, I decided to get my Thanksgiving dinner shopping done.  I found that they now have a Great Value brand of TP that I always use.  Nice!  It was a busy afternoon and evening getting things done for the coming week.

Monday, the VA Hospital released my father-in-law from the hospital.  It took me several hours for driving, waiting, checking in, talking with the staff, etc.  We got home about 5:45pm.

Autumn finished up dinner for me - chicken, broccoli fettuccine alfredo and garlic breadsticks.

Tuesday began a new routine with having my father in law to care for.  So getting used to that.  We took an hour and went over to see my sister and brother-in-law's new rental home. :)  I'm excited for them to have more space inside and out!

We had snappy tuna melts and clam chowder for dinner.

Wednesday morning.  Reading my Bible with a cup of coffee at my desk looking out over the rainy day.

Last day of school for the week.  Some preparations for Thanksgiving meal.
Autumn made two pumpkin pies.  I made a cheesecake.  Sierra and I made the deviled eggs.

I grilled cheeseburgers for dinner.

I pray this day is a blessed day for you.

Friday - New Changes for our Family

Enjoying a very wet but pretty fall here in Oregon.  I love the colors of the leaves, the rain and the foggy mornings.

Monday was a busy day.  I wasn't sure if I wanted to share yet but we moved my father-in-law in with our family.  My husband and brother-in-law, Adam, went to Reno this past weekend to pick him up.  They arrived Sunday night.
Due to his condition, Adam advised us to take him to the hospital Monday and that is what my husband and I spent Monday doing.  They did admit him.
While we were up in Portland, we went to Vancouver to get my husband's work truck and trailer and to go to the chiropractor for our weekly visit.
We didn't get home until 5pm.  Tiring day.

Max and I took our evening walk and then I made dinner - pierogis, sausage and cabbage skillet.

Tuesday, I had to go to Wal-Mart to get some items to get my FIL set up in our home.  I always love a couple boxes of these cherries for the holiday season!

I spent the day reorganizing to manage our home with another person.  I know it will be trial and error and we will just take it day by day.

My husband is gone this week for work.  They are doing a roof north of Seattle, WA.  He left Tuesday morning and got back Thursday night.  So frozen pizza it was for dinner!  LOL!

Got my Max a new mat.  He actually is trying it out. :)

Wednesday was crazy rainy!!!  Seemed like it just rained and rained all day long.
I had to do my grocery shopping Wednesday at Winco.

Took some time on school to do more grades and prep video returns to Abeka.  I'm behind this year even though we started way early - with moving and such.  One step at a time!

Thursday dawned with some blue skies!  What a nice start after all that rain!

Every time I do grades, I see our old Ohio address and think how quickly things changed.  I filled in these books for this school year before everything happened.  Sometimes, it's hard to think back...

And here we are.  Our state of Oregon is on a semi lockdown again.  I pray this all ends very soon.

Thursday, worked on school.  Regular household chores.  Did a few errands and stopped for a quick chat with my sister.
Everyone needs to live where they can stop and chat with their sister. :)

Pretty rainbow as Max and I did our evening walk. :)

Made vegetable beef soup for dinner.  Perfect fall dinner.

Some days, life feels out of control.  Just sit back with someone you love and laugh.  Have a great Friday!

Girls Weekend!

This weekend, Friday - Sunday, was a girls weekend at our house!  My husband had to make a trip out of town and left Friday morning.  We did school.  We had mushroom soup with oyster crackers and grilled cheese sandwiches for dinner - I made mine with mayo and a slice of tomato with colby cheese. :)

The teens had their last night of a youth conference at church so my sister dropped them off and I picked them up.  We watched the part one of Anne of Green Gables.  We decided to do a marathon this weekend and watch all in the series.  My niece, Kylee, came Friday night and stayed until Sunday evening. It was fun for the girls to do a girl cousins weekend!

Saturday was a messy, rainy day!  I got soaked just taking Max on his morning walk.

The girls had fun sleeping on the air mattresses in the living room.  We had ice cream sundaes, popcorn, chips, Oreos, pizza rolls - lots of snacks!

I spent several hours over at my sister's house helping her pack up some of their house.  They will be moving to a different house - bigger - on December 1 - so she is just trying to get packed up as much as she can early.

For dinner for the girls and I, I made chicken tenders and mac and cheese in the crockpot.

Saturday, we watched the second part of the series.

Sunday, we had church in the morning.  Rachel and the boys came over for lunch after church.  I made Shepherd's Pie and had bread, butter and drinks.  Rachel brought a bacon caesar salad.  Yummy lunch and fun to eat together for a good meal.

After Rachel and the boys left, we watched the third and last part of the Anne series.  Then Kylee went home about 4:30pm.  Fun weekend and memory for the girls!

Veteran's Day 2020

What a busy week!  How is it Thursday already? :)

Mondays are busy with school, house cleaning, laundry and small errands like going to the chiropractor.

Dinner was white chicken chili and quesadillas.  Mmm!

Tuesdays are my grocery shopping day.  This week, my sister and I went to breakfast at a place called Shari's.  I had their entree - avocado and tomato eggs benedict.  Hash browns on the side - it was good!  We spent a couple hours talking, eating and planning our Thanksgiving. :)

We then did our grocery shopping at Winco.  After I dropped her at home, I had to run a few more errands.  Augh~ I told you those errands never end!

I made a sheet pan dinner - do you like these?

The fish sheet pan dinners are SO easy!  I switch up what I use.

Tuesday, I made roasted red potatoes on one baking sheet.  Just cut up red potatoes into large chunks, drizzle with olive oil and season with your favorite seasonings.  I use a garlic pepper, a coarse salt and a little of my homemade Cajun seasoning.  Just toss and bake.  Flip one time during the baking time.

On another sheet, I put a frozen mix of cauliflower and broccoliBake for about 10 min - add fish fillets right on top and bake until fish is flaky and done. Season however you prefer.

Healthy and so easy to make on a busy night!

Tuesday night, there was a ladies meeting at church.  I went with my sister.  We made these cute wooden decor pieces.
Tuesday was unique for me.  It was the first event outside of a church service that I attended since I was the pastor's wife. This is a new journey for me.  For my husband.  For our family.

Wednesday, my mind was on thankfulness to our veterans.  I am grateful for all those who have served and are serving.  We cannot truly say thank you enough to them!

The girls and I watched our president at Arlington National Cemetery.  Thank you, Mr. President!

On my walk Wednesday morning, I took some extra time to walk among the graves and say thank you to those who had served and were now buried there.  I found dozens that had served in many wars.

Silas Hanson - served in the Civil War.  I love this!  I know it feels so very long ago but things like this make it seem so very real and not so long ago.

I'm probably weird but I LOVE history like this!  It is so interesting to me. :)

At 4:30, I picked up my niece and nephew.  I fed them dinner at our house and then I took all the teens to a Youth Conference event at church.

Jack and Summer had fun playing some video games together. :)
