Chilly Winter Days

Wednesday, January 22

Brr - I am like this rabbit sitting by my fireplace!  It is cold here in Florida.

My kitties are enjoying the blankets.

She's hilarious!

My day was spent cleaning the house, school and laundry.  I was happy just to stay home ALL day. :)

Choir practice was cancelled because of the bad weather predicted.  This may be our only day EVER to have our day cancelled for possible snow/sleet/freezing rain.

Thursday, January 23

SO cold.  Even though it says snow, at our house, we did not get any freezing rain, sleet OR snow.  All rain for us but it was cold enough to do so.  Crazy.  Even though I wanted to stay at home and be warm all day, I couldn't.

Eric flew out for a work trip.  I made a pot of vegetable beef soup.  Mmm!

We did Day 98 of school, Sierra worked 8-3pm and then it was off to AHG and Youth Choir Tour practice.

Friday, January 24

Another chilly start but at least we have sunshine today!
I like Fridays because we have no evening weekly commitments.
I did finish Sierra's application to graduate.  Wow.  Where does the time in life go?

Autumn is so sweet.  She texted us and said when people ask about her parents, this is the picture she shows them.  She said it is her favorite.  I think she is my favorite child. :)

So in the winter at my house, since the sun doesn't rise as high in the sky, my back patio doesn't get hardly any sun.  While in the summer, that would be nice, but in the winter - I would love to enjoy the sun when we get it.  So I decided to move one of my rocking chairs to the front to have a place to enjoy the sunshine. :). I do love it!

This is my old man.  He is a softie and sometimes, he makes a few biscuits for me. :). I just love him.  He is mama's boy.

Happy Friday!

Happy 45th Birthday, Eric!

Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
