Garden Projects

 Saturday, February 15

Rough start to the morning with a headache.  The kitties were ready to get up too.  I got coffee and Excedrin right away.

It is a warm but stormy looking day.

Had my devotions...did some blog posts...watched the morning news and checked my e-mails.

I wanted to go to Wal-Mart to get Valentine candy on sale 50% off.  I had my grocery list ready for the week so I figured why not knock that out too.

My aunt Joan sent me this photo from my Uncle Ron's funeral.  How special!

Summer was gone with her friend to the Civil War Reenactment (since Thursday night).  Sierra worked 3-10pm.  Eric was still in Atlanta.  I was supposed to pick him up at 6:57pm but his flight was delayed over and over again so he ended up Ubering home.  So it was a very quiet day for me at home.

Tis the season in Florida - pollen season!

I went to Home Depot to get coverings for my garden beds.  Of course I had to look at the plant section.  I wanted to get oregano and I loved the caption on this one!

My old man looking out into the morning. :)

Harvested some lettuce from my garden.

Had to cut up some boards to hold up the canvas drop cloths I got for my garden.

6x9 canvas drop cloths for my garden to protect them from the cold nights.

I did talk to my parents and both my sisters which is unusual to get multiple calls in.

I purchased my mom a flight to come visit.  I also reserved and paid for our hotel for the homeschool convention that we will be attending in KY/OH.  Those were two big to do's that I needed to purchase for awhile and I was glad to get it finally done and settled.  Productive day!

Sunday, February 16

The third Sunday of the month is when I volunteer in the kids ministry.  I was not needed so I went to our normal Connection Group class.  Then a good day at church.  Pastor Keith is back teaching in Revelation which I like.

We were supposed to go pick up Summer and watch the Civil War reenactment that she participated in after church but a huge thunderstorm came in and it was cancelled.

I made Chicago dogs and Italian pasta salad for lunch.  We cleaned up the kitchen and then I just relaxed.  Read my Bible.  Watched some Leave It To Beaver.  The temperature had dropped and it was chilly.  Looks like we will have some cooler weather this week in Florida.

The girls had youth group in the evening and an extra activity - Ultimate Frisbee.

Happy 45th Birthday, Eric!

Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
