My Valentine's Day 2025

Thursday, February 14

Well, my Valentine's Day was very simple.  Nugget woke me up at 3:30am and I couldn't get back to sleep for a few hours and then woke up later than I like to.  Sierra had to work from 8-3pm and Summer is at the Civil War Reenactment.  So I had a quiet day.

We had a little sunshine in the morning so I sat outside for my Bible reading.

This boy was clingy this morning.  Had to give him some attention.

I had lots of errands.

Mailed our DNA samples for the Ancestry.com kits that the girls got us for Christmas.  BTW, we have the most polite and respectful young man that is our mailman!

Picked up a free 8x10 at Walgreens.

Stop at the ATM for cash.

Dropped off money to the Martins for candy bars they are selling.

Chiropractor visit which was very needed.

Had my tires on my Jeep rotated at Discount Tire.

Went to Bath and Body Works for a free item I had a coupon for.  I got this. :)

Then picked up lunch at Taco Bell.

Then to CVS for another free photo and do my couponing.

Also got to talk almost 2 hours with Autumn.

It felt chilly - OK, it was only in the 60's.  LOL!  Chilly for Florida people.

I changed in my pajamas and did some computer work. Sierra brought me a lemonade and a heart tray of chicken minis for us to share.  She is so sweet.  She was not feeling well and was running a fever.

 Updated my scholarship reimbursements.

Submitted Student Learning Plan for Summer for school scholarship.

Called Campus House and made three reservations for three stays at PCC.

Was able to talk to my mom on her way home from the funeral of her brother.  So happy that went well!

Cleared out my e-mails.

Checked to make sure Sierra's driving school class she took - that her certificate of completion had been uploaded to the county site.

Paid tithe.

Paid my sister for my vitamin order.

Glad I got a lot done today. :)

Happy 45th Birthday, Eric!

Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
