Trying My Hand at Cabbage Rolls and a Little Homeschool Sentiment

We have had some near freezing nights.  I have been covering my garden to protect it.  My tomato plants got a slight burn but overall, everything stayed alive. :)

School - Day 119.  While the girls did their school videos, I did a few errands.

First I stopped at Wal-Mart for a few items I needed for meals.  Of course, they didn't have ONE item that I needed for dinner that night.  Water chestnuts.

I was very interested at the policeman sitting at this intersection in the parking lot.  This is one that no one seems to know what to do.  Only one way has to stop and the other way doesn't.  I have been honked at TWICE here because I did not stop - I did not have to! - and the other driver felt they had the right of way.  They didn't.  While I was there, I was so happy to see two drivers pulled over for not respecting the rules here!  Yes!


Then I went to CVS and did a little couponing.  Then I went to the chiropractor and got my weekly adjustment.  Which I really needed.

Then I had to go to two Publix stores to find water chestnuts.  Ahh.

When I got home, Sierra and I worked outside on the front porch in the sunshine on her quizzes and tests.  We got so much accomplished and that felt so good.


I know most won't understand this.  I filled out the top portion in the grade books for Sierra's last nine weeks of high school.  

The last time I will do this for her.  My third kid.  

The last time I will do this having two kids that are home schooling.  

After this last nine weeks, I will have just one daughter left home schooling.  

This adds so much sentiment to my brain.  

I took a photo.  God has been good to me and I am grateful for this home schooling journey.

I made egg rolls and orange chicken for dinner. 

Saturday, February 22

In the morning, I took the girls to get haircuts.  Great Clips was having their $8.99 sale which worked out perfect.

Sierra did a day of school.  Then she worked from 3-10pm.

Summer and I worked on quizzes and tests for the rest of the day.

I made another new recipe - cabbage rolls.  Our family loves cooked cabbage and Eric had sent me this video of making cabbage rolls.  Joanna Gaines has a recipe for cabbage rolls in her cookbook so I made them. Eric and I really liked them!  It was fun making some new recipes this week for my family.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
