Fine Arts at PCC

Eric and I got home from our Aspire event early afternoon.  Summer made dinner - fettuccine alfredo with chicken and broccoli.  Then it was off to AHG at 4:30pm.
Sierra's group did cake decorating.





After AHG, the girls went to Youth Choir Tour practice from 6:30-7:30pm.

Friday, February 7

Busy day.  Trying to catch up from being gone all week.  I had committed to bringing a meal to one of Eric's coworkers whose wife just had a baby.  I had to go to the store to get a few more things.  Then make that meal and dinner for us as well.  



I couldn't believe how much they have cleared from the land.  Did I mention a Wal-Mart is going up literally across from our neighborhood?  Aye yay.  Not really excited about this.  But I can't move my house.  Time to move to a farm. :)

I made taco pasta salad for our dinner.

I thought the chicken would be done by 4 but it wasn't so I got a late start leaving.  We have been having issues with the coolant going down.  I filled it and then left to drop off the meal.  I didn't even get to the freeway and had to pull off in the Wal-Mart parking lot because the car overheated.  I called Eric and he came down in the Volvo.  We went together in the Volvo, dropped off the meal and visited a bit and then came back to get the car.

From Wal-Mart, he took the car home and I drove to the church to pick up Summer from a church event.  I had wanted to attend this event for our church's sport ministry but I literally got there about three minutes before it dismissed.  It is what it is.  I was blessed to hear over 700 people attended this event for our sports ministry and our community.

It was a long day and I just left all the dishes and went to bed.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
