Chris Tomlin and Doctor Appointment


While Eric and I were in Utah, our church held a concert on October 3rd with Chris Tomlin.  He asked our choir to join him for a song and Sierra and Summer got to be a part of it!  I was so excited for them to have this opportunity!








I'm so grateful the Lord led us to this church.


Sunday, October 5 -Friend Day
Sierra sent us this photo from church Sunday morning.  We were flying back from Utah.  It was our Friend Day and many decisions were made!  Praise God!


In the Delta lounge at the airport, I tried their cauliflower and white cheddar soup.  So good!  I need to find this recipe.


While I was gone, my boy cat was picking fights in the neighborhood.


All this traveling is tiring.


My cats miss me and hover near when I come home.


Later this month, I will add two more trees to my National Park map. :)
When we got home from our flight from Utah, I did laundry.

Monday, October 6

Jumping right back in life and to do's.
Sierra worked 8-3 and Summer did school.
I had an annual doctor appointment with our nurse practitioner - Kelly Trumble with Baptist Health.  I really like her.  I had a great visit and that is checked off my Health To Do List for the year.  (Actually was on my to do list for LAST year!)
I also updated my tetanus shot so that is good for ten years.  Another health item updated.

I went shopping for new clothes for our trip.  Found some things I liked!
Also went to the chiropractor.  All these errands were in Orange Park.  I like to group things together.

A good and productive day!  Minus making dinner.  Ha!  I was going to make KFC bowls.  First, my husband had eaten all but 8 pieces of the popcorn chicken.  I started boiling the potatoes for the mashed potatoes and ran to the store for more chicken.  By the time I got back, a lot of the potatoes had liquified.  Geez.  Husbands don't quite know the ins and outs of cooking.


Tuesday, October 7

Sierra worked 3-10:30pm and Summer did school.  
Summer had her piano lesson at 11am.
I did grocery shopping.
Then I took Summer to her riding lesson at 5:30pm.  One of the barn cats at the stable.



This is our feral guy that hangs out.  Sometimes he naps under my grapefruit tree.

Off to Washington DC tomorrow!

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
