The End of September


Monday, September 29


In the morning, Summer returned from the reenactment with her friend and back to school.
Eric was off work.  He had an appointment at 9am to have his labs drawn.
Then he came home and mowed and trimmed the lawn.  He has been home more this summer to mow and while I love mowing, it is nice to have the help for that job.  I wasn't sure if he would get done before it rained.



I grilled burgers and made fries for dinner.  I also roasted some pumpkin seeds. :)

Last day of the month!  I just love my ambience playing.


Yes, it was quite the wet last two months!  Not complaining - I love our summer rain here in Florida.


I have had a bumper crop of jalapenos.  They just won't stop producing.  It is crazy.
Sierra worked two shifts today - 11-3pm and 6-10:30pm.
I did some shopping and the chiropractor today.  
Made eggrolls and orange chicken for dinner and took Summer to her riding lesson in the evening.

Leaving the warm and going to the cold in Utah tomorrow!


My husband's company is hosting a couples retreat in Park City, UT and we are assisting in it.


Sierra worked 9-3pm today.  Summer had her piano lesson and I took Eric to the airport.  He flew out ahead of me for Utah - left at 12:45pm.
She made some spring rolls with peanut sauce for me and her. :)
I redid my calendar for the month of October.


Then we dropped off the kittens to the Humane Society at 4:30pm.  They are at surgery weight.  They will have their spay surgeries tomorrow and then will be adopted out into homes.  I will miss those girls!  You can see all my foster photos and videos under Foster Kittens 2025.

Then it was off to the church for my last Every Day Theology class.  I will be glad to get back to choir practice on Wednesday nights. :). But I accomplished the class.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
