Recipe: Cool Ranch Crunch Wraps

Cool Ranch Crunch Wraps

I made these for our family and everyone enjoyed them!  They are very simple.  We will put it on our menu list to make again.

Ingredients

  • 1 lb lean ground beef
  • pkg taco seasoning
  • 2/3 cup water
  • 16 oz salsa con queso
  • 1 southwest or avocado caesar salad kit
  • 8 burrito size flour tortillas
  • oz cool ranch tortilla chips

Instructions

  • In a large skillet, cook ground beef until browned and crumbly. Add taco seasoning and 2/3 cup water. Continue cooking until mixture thickens.
  • Working one at a time, spread 1 - 2 tablespoons salsa con queso in the center of each tortilla, making sure to leave about 3 inches around the edges to fold. Top with 2 - 3 tablespoons taco meat, then place a few tortilla chips on top of meat. Spread another 1 - 2 tablespoons queso on top of chips. Top with lettuce and a drizzle of dressing from the salad kit. Repeat with remaining tortillas.
  • Cut 2 tortillas into quarters, and place 1 quarter on top of the lettuce.
  • Fold the edges up and over the center. Continue to work your way around the tortilla, folding as tight as possible to form a hexagon.
  • Heat a large skillet to medium heat, and coat with cooking spray. Place wrap seam - side down, and cook until the underside is golden brown, about 2 minutes. Flip and cook on the other side, about 1 - 2 minutes longer. Repeat with remaining tortillas.

Tip:  The original recipe calls for a salad kit.  It would be way more frugal to use regular romaine and a bottle of salad dressing of your choice.  An avocado lime ranch would be good.  You can purchase that pre-made or make your own dressing.

You May Abound In Hope

Today I completed a devotional book by Candace Cameron Bure.  100 Days of Joy and Strength.  I was struggling last night.  Darkness seemed to overwhelm me.  The last day of this devotional gave me exactly the encouragement I needed to go another day. Here are the verses she shared from God's Word. "I wait for the Lord, my whole being waits, and in His word I put my hope."  Psalm 130:5 "We are afflicted in every way, but not crushed; perplexed, but not driven to despair; persecuted, but not forsaken; struck down, but not destroyed;"  II Corinthians 4:8-9 "As for me, I watch in hope for the Lord, I wait for God my Savior; my God will hear me.  Do not gloat over me, my enemy!  Though I have fallen, I will rise.  Though I sit in darkness, the Lord will be my light."  Micah 7:7-8 "I remain confident of this; I will see the goodness of the Lord in the land of the living.  Wait for the Lord; be strong and take heart and wait for the Lord."...
