Recipe: Easy Potsticker Soup

I made this DELICIOUS soup to go with the eggrolls I posted about last week...perfect dinner combo!   Try this soup...it is wonderful! Easy Potsticker Soup 1/2 lb. Chinese or Napa cabbage, thinly sliced 2 medium carrots, cut into matchsticks 1/3 cup thinly sliced green onions 3 tbsp. soy sauce 2 tbsp. rice vinegar 3 garlic cloves, minced 2 tsp. minced fresh gingerroot or 1/2 tsp. ground ginger 1/2 tsp. sesame oil 8 cups chicken broth 1 package (16 oz.) frozen chicken potstickers Chow mein noodles In a slow cooker, combine the first nine ingredients.  Stir in broth.  Cook on low 5-6 hours until vegetables are tender.  Add potstickers, cook on high covered, for 15-20 minutes.  Sprinkle with chow mein noodles before serving. *I made this on the stove - if you don't have time for the crockpot. *Add more broth if you like.

Recipe: Egg Rolls

I made this recipe last weekend and we loved them!  I can't wait to make them again!  Summer had a blast helping make a "Chinese dinner" with me. :) Egg Rolls 1 lb. sausage 1 bag coleslaw mix 1 can sliced water chestnuts, drained 1/4 cup chopped green onions 3 tbsp soy sauce 1 tsp garlic powder  1/2 tsp ground ginger salt and pepper 14 egg roll wrappers 1 egg, lightly beaten oil for deep fat frying sweet and sour sauce In a skillet, cook sausage until no longer pink; drain.  Stir in coleslaw mix, water chestnuts, green onions, soy sauce, garlic powder, ground ginger, salt and pepper.  Saute until cabbage is crisp tender. Position an egg roll wrapper with one point toward you.  Place 1/4 cup sausage mixture into the center.  Fold bottom corner over filling; fold sides toward center over filling.  Roll toward the remaining point.  Moisten top corner with beaten egg; press to seal.  Repeat with remaining wrappers an...

Treats and Blessings

Just a few random pictures from the week.  This is from a birthday party we went to for these little guys...Beau and Austin...they are so sweet! New view since we have a kid driver.   Summer and I just talking one night. Belle, this dog cracks me up with her sleeping positions. One of my favorite snacks...yummy!  The extra toasty are the best! Summer says on Sunday afternoons...Want to spend some time together?  It is usually doing hair, makeup and nails. :) It has been a very active winter...snow, fog, rain, cold...I am so ready for spring! Sunday, I was given this special gift from Mona!  It came in this beautiful bag...gift cards to Brothers BBQ...and this beautiful basket of goodies!  I actually haven't opened the basket...I am saving it for my birthday. LOL! When I came to work on Monday, I had these on my desk - a gift from my boss and his wife from their recent trip to Hawaii...the candle smells so...

"For I Know the Plans I Have for You"

I love this verse from Jeremiah.   The King James Version says... "For I know the thoughts that I think toward you, saith the Lord , thoughts of peace, and not of evil, to give you an expected end."   The Modern English Version says... "For I know the plans that I have for you, says the Lord , plans for peace and not for evil, to give you a future and a hope."   The beginning says... I know the plans I have for you .  When I hear the word plans, I think of the will of God.  Simply put, I would say God's plan for us would also be called the will of God.  I know that we could argue the perfect and permissive will of God.  Maybe you don't even know what those are.  And to be honest, at this stage of my life, I have stopped worrying about God's perfect will.  It was exhausting and confusing.  All I want to concern myself with is if I am doing God's will as His child.  And I believe I am.  Am I perfect?  Ab...

Capital Connections 2019

Monday night, our church hosted a special service called Capital Connections .  It is an event organized by a fellow church in Las Vegas - Liberty Baptist Church.  It is always a joy to connect with these folks and to hear Pastor David Teis speak as well. On Tuesday, many folks go to our capital - Carson City.  They present a gift of a Bible with their name on it to the representatives there.  It is an all day event.  They meet with as many leaders as they can and they also pray with them.  And boy, don't we need prayer so badly in our government!   I wasn't able to go but my husband did.  I wanted to share a few photos from their day.  If you have the opportunity to do something like this sometime, I encourage you to do so.  I went two years ago and it was a blessing!

Hello, March!

March is here!  I am so glad.  I am especially glad for time change that will hit in nine days!  LOL!  It seems like a new start that first Sunday when the evening light lasts longer. And it is my birthday month!  Which I suppose isn't a big deal when you are just getting one year older.  Ugh.  But it does call for free all-you-can-eat-sushi so that tends to be the highlight of my day.  Ha!  And we get it off at our work - paid!  Can't beat that! :) And gardening is just around the corner...hopefully! So, whatever you are looking forward to in March...I hope it is happy as mine!
