Recipe: Lose It Lasagna

My husband is counting calories to lose weight and recently he sent me this recipe and asked me to make it for him.  I did and the entire family enjoyed it.  Surprisingly, one of our pickiest eaters gobbled it up! *Recipe is from the Lose It blog which is the app we use.


 Lose It Lasagna

1/4 lb extra lean hamburger
4 zucchini/squash
1/2 bag frozen crinkly cut carrots
1/2 bag frozen cut broccoli
15 oz. fat free ricotta
1 egg
1/2 tsp dried oregano
1/2 tsp dried basil
oven ready lasagna noodles
1 3/4 cup fat free mozzarella
44 oz. pasta sauce

Preheat oven to 375 degrees.  Brown hamburger in a large skillet, set aside.  Cook squash and zucchini in remaining hamburger grease until tender on high about 5 minutes.  Add frozen veggies and cook until they've defrosted - another 3-5 minutes.  When all veggies are tender, add the hamburger back in and add most of the pasta sauce.  Turn the heat down and let the sauce warm up to a simmer.

While the veggies are cooking, mix spices, salt, pepper, ricotta, egg and half of mozzarella in a bowl.


Spread a thin layer of pasta sauce on the bottom of an ungreased 9x13 pan, then place 3 uncooked lasagna noodles side by side.  Use a rubber spatula to smear 2/5 of the ricotta mixture onto the noodles, then spread half of the meat/veggie mixture on top of that.  Continue in that manner. Pour the remaining pasta sauce on top and top with remaining mozzarella.

Cover with foil and bake for 25 minutes.  Uncover and bake for 15 more minutes.  Cut into 12 pieces.  (Each piece is 195 calories and chock full of veggies!)

You May Abound In Hope

Today I completed a devotional book by Candace Cameron Bure.  100 Days of Joy and Strength.  I was struggling last night.  Darkness seemed to overwhelm me.  The last day of this devotional gave me exactly the encouragement I needed to go another day. Here are the verses she shared from God's Word. Ten Tips for Sunday School Teachers

Ideas for Sunday School Teachers: 1.  Write a note to each student and mail it to their home. 2.  Visit the child in his home and bring a small treat. 3.  Make a special treat once a month for your students on Sunday. 4.  Have a Sunday School class activity on a Saturday or Sunday afternoon. 5.  Pray for your students. 6.  Have a monthly or quarterly contest for your students.  Include bringing their Bible, saying memory verses, attendance, etc.  Award small prizes. 7.  Have a special craft once a month. 8.  Rev up your teaching time!  Use props such as costumes, pictures, videos.  Make your lesson time come alive.  Teach your lesson 2-3 times during the week out loud – you will be amazed at how you will be able to teach it to your students – not just following the words in the book. 9.  After the lesson, be creative!  Students should not just be sitting and waiting for Sunday School hour ...
