Recipe: Apple Pie Enchiladas



Apple Pie Enchiladas

2 cans apple pie filling
8 flour tortillas
2 tsp. cinnamon
Sauce:
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup water

Spoon the apple pie filling evenly into the 8 flour tortillas. Sprinkle each with cinnamon.  Roll up and tuck and place seam side down in greased baking pan.

In a medium saucepan, combine butter, white sugar, brown sugar and water.  Cook on medium to a boil, stirring constantly.  Reduce heat and simmer 3 minutes.

Pour the sauce over the enchiladas and let stand 45 minutes. Bake in a preheated oven for 20 minutes at 350 degrees or until golden.  

Serve warm with vanilla ice cream.  Enjoy!
