Recipe: Beef Alfredo Pasta

I absolutely love this recipe!  It is super easy and you can make it in right about 15 minutes - how much better can you get?  For busy moms, a recipe like this in your recipe box is gold.  One of the best things I like is it holds up - and doesn't get all clumpy like traditional fettuccine Alfredo.  It's even a great dish for company - add a veggie like corn or a side salad...garlic bread or cheddar biscuits and you have a winning dinner!

Beef Alfredo Pasta



A box of penne pasta
Two jars of roasted garlic alfredo sauce
1 package frozen beef strips
1 can tomatoes with green chilies (do not drain)

Cook pasta according to directions.  Drain.
Cook beef strips in a small amount of olive oil in a skillet until cooked through and browned slightly.
Add alfredo sauce, beef and tomatoes to pasta.  Heat through.

Top with a little parmesan cheese. :)
