Recipe: Catalina Apricot Chicken

Here is an easy chicken recipe for your next dinner - it goes well with rice and and egg rolls or a side salad.  Put it in the crock pot in the morning for a no-fuss dinner.


Catalina Apricot Chicken

1/2 bottle Catalina salad dressing
1 package onion soup mix
1/4 cup apricot jam
6 chicken thighs (I used 3 boneless, skinless chicken breasts sliced down the middle to make six)

Mix the dressing, soup mix and jam together.  Put the chicken in a baking dish, skin side up (if using thighs), and pour the dressing mix over the chicken.  Bake at 350 degrees until no longer pink in the middle.
I cooked mine in the crockpot for 6 hours on low - super easy!

Add rice and egg rolls for sides for an easy and complete meal. :)
