Recipe: Balsamic Roasted Tomatoes

This is a wonderful side dish that looks fancy but is quick, easy and inexpensive!  Use the cheese that you prefer - feta or Parmesan.  Delicious!


Balsamic Roasted Tomatoes

6 roma tomatoes halved crossways
balsamic vinegar
3 tbsp. grated Parmesan cheese OR one small container Mediterranean feta cheese
salt, pepper and dried basil

Preheat oven to 400 degrees.  Line a rimmed baking sheet with foil.  Place tomato halves, cut sides up, on a baking sheet.  Drizzle with balsamic vinegar.  Sprinkle with salt, pepper and basil.  Top with the Parmesan or feta cheese. Bake 10 minutes.
