Recipe: Pie Crust

Thanksgiving is coming and that means pie! 

Here is a simple recipe that I use to make my pie crusts.

Single Pie Crust

1 cup flour

1/3 cup shortening

1/2 tsp salt

3-4 tbsp ice water

Double Pie Crust

1 1/3 cups flour

1/2 cup shortening

1/2 tsp salt

4-5 tbsp ice water

Mix flour, salt and shortening together with a pastry blender, 2 knives or your fingertips until mixture resembles meal.  Sprinkle on water - a little at a time until a ball that will not crumble is formed.  Do not over mix and remember that a pastry is made by "feel".  Never dump in all the water at once.  Roll out on a floured surface and rub flour on your rolling pin.  Roll until pastry is 1" larger than your pie pan.
