Recipe: Strawberry Shortcake

Strawberry Shortcake 

Strawberry shortcake is always a wonderful dessert in the summertime!  Here is a yummy shortcake recipe to use that we enjoyed this week.

2/3 cup sugar

1/4 cup shortening

1 large egg, room temperature

1 tsp. vanilla extract

1/4 tsp. salt

1 1/2 cups all-purpose flour

2 tsp. baking powder

1/2 cup whole milk

In a bowl, cream shortening and sugar.  Add egg and vanilla; beat well.  Combine dry ingredients and add alternately with milk to the creamed mixture.  Spread in a greased 9-inch square baking pan.  Bake at 350 degrees for 20-25 minutes.

Serve with sliced strawberries and whipped cream.
