Asian Beef and Noodles
This is an economical, kid-friendly and tasty dish for your family! I serve this dish with eggrolls on the side and it fits great for our family of six. :)
2 lbs. ground beef
4 packages (3 oz. each) Oriental or Soy ramen noodles, broken
5 cups water
4 cups (16 oz. package) frozen broccoli stir-fry vegetable blend
1/2 tsp. ground ginger
4 tbsp. thinly sliced green onions
In a large skillet, cook beef over medium heat until no longer pink; drain grease. Add the contents of two ramen noodle flavoring packets; stir until dissolved. Remove beef and set aside.
In a large pot, combine the water, vegetables, ginger, noodles and contents of remaining two flavoring packets. Being to a boil. Reduce heat; cover and simmer for 3-4 minutes or until noodles are tender, stirring occasionally. Add beef to the pot and heat through. Stir in onions.
