Back to PCC, Fish Tacos, and Sunshine!

 


Monday, January 13

Monday, a good day to reset for the week.  I did my grocery shopping.  I am shocked by the egg prices.  $6.56 for 18 eggs!!!


I went to Wal-Mart and Aldi.  I found this organizer at Aldi.  I ended up getting two for my pantry to store my russet and red potatoes, garlic and onions.



I also went to the chiropractor.


Found this stinker snoozing on my chair in my bedroom.


It was Autumn's last night at home and I had her choose a meal for me to make.  She chose fish tacos and salted caramel mini cheesecakes.


Tuesday, January 14
It was such a nice winter break having my girls home.  I didn't realize how much I miss them both.  Tuesday morning, Autumn and I left early to head back to PCC for her second semester of her freshman year.



Autumn is a great traveling partner.  We talked and talked and it makes the trip seem shorter.  I enjoy our discussions so much.


My girls' bunks in their dorm room.  I wasn't sure how it would be for them to room together in college.  I mean, they already have to share a room at home.  But they seem to have grown close and I am so glad they have this opportunity to make memories this year together!


We did a Wal-Mart shopping trip and then had lunch at Chick-Fil-A with Addie on her lunch break and then it was back home for me.  I will miss them but I am SO very grateful for a place like Pensacola Christian College.  SO happy, grateful and blessed.  God is SO good.


Ricky, Brandie and TJ were visiting a few colleges and they stopped at PCC.  We missed seeing each other but they did see Brad and Addie. :)

My brother in law visited for the night.  He was driving the truck for Eric's company.  I think this stinker missed me today!
I had made broccoli-cheese soup and BLT's for my family's dinner.

Pretty start to my day.  Glad to be home!


Working on laundry and bedding today.  Made a marinade for the chicken for dinner.



Sierra did her first lab for her culinary life skills class - chocolate chip cookies!



She did a great job!



Grilling up some honey mustard chicken for a couple meals.
I made honey mustard grilled chicken, roasted red potatoes and brussel sprouts.
Then it was off to choir practice.  I love sitting with my girl in practice!

These two!



There is little that makes my heart more happy than sunshine!  I love seeing the sunshine streaming through my windows!!


And add freshly baked sourdough - mmm!  Happy day!

I used the rest of the honey mustard grilled chicken and made salads for our dinner.
Then it was off to American Heritage Girls from 4:30-6pm.
Then Youth Choir Tour practice from 6:30-7:30pm.
Busy but good day!

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
