Cold January Days

This boy loves his mama.
I drove home from our Aspire event in Atlanta in the morning.  I do find it a little difficult to get going that day.  Just tired.
We did have AHG at 4:30pm.  Then Summer made our favorite meal - baked feta pasta!  Yum!



Finished my first book for 2025.  The Little Liar by Mitch Albom.  Shorter read about the Holocaust.  Loved it.

Friday, January 10
My first full day back at home after being gone for Aspire.  I just love being home.  It is the best. :)
The sky and sunrise didn't disappoint.

First time in a VERY long time that my starter wasn't ready.  Had to feed it twice and give it more time.


Enjoy having my ambience on during the day.
I had a LOT of cleaning to do this day!


Been such a busy beginning of January that I am just now getting to change my calendar for the month!


Made crock pot chicken and dumplings for dinner.

I had to put my sourdough into the fridge overnight and let rise in the morning.  Just too cold, I guess!

We worked on tests and quizzes for school.
Sierra is doing school on Saturdays to finish school on time by May 1!

Always got a kitty on my lap!
For church, we went to Connection Groups and then we worked in the Preschool for church time.
Parent meeting for the upcoming Youth Choir Tour.  We would love your support through prayer and financial!  It is going to be a great opportunity for the girls!
I called my mom in the afternoon for her birthday.


I went to Aldi for some things I needed for the week.  The price of eggs is incredible right now!!

The girls had Youth Group at 6pm so it was a quiet evening for me.  Eric flew in at midnight.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
