Hymn Sing 2025!

Friday, January 17

Definitely using my fireplace this January - even in Florida!!  Today was a regular day of school.  Even got down to the gym.



Summer reading while doing her PE.


Made a new recipe egg roll in a bowl.  I think I would have liked it but I used ground turkey and it lacked the flavor.  The recipe also called for sriacha and I didn't like that in it at all.  So if I make it again, I would make some adjustments.


Also made egg drop soup.

Then we left to go to the Hymn Sing 2025 concert by Gerald Wolfe at our church.  Summer and I were greeters at one of the doors.

We enjoyed it so much!  What a blessing and a great night we had together!












Saturday, January 18

I had a great start to my Saturday!  I got a lot done before 9am which feels so good.



Eric and I took the whole morning to go over our finances - our investments.  


If you have kids, you will probably find an empty plate like this in your fridge.  Ha!


For dinner, I made tuscan style shrimp foil packets with an alfredo ravioli on the side.  I thought they were very good!


Sunday, January 19

On the third Sunday of the month, I usually help in the kids classes.  However, they did not need any help today so I attended our class with Eric.  We had missionaries from Word of Life to speak to our class.
Then church and singing in the choir.  Pastor Keith preached a wonderful sermon on abortion.  You can listen to it HERE.  It was such a good word!


I got a lot done that afternoon.  I made traditional chef salads and Summer made a blueberry cobbler dump cake for lunch.

I went to Wal-Mart at 6pm to pick up my grocery order for the week.  The girls had youth group at 6pm and then an Ultimate Frisbee activity at 7:30pm.

Happy 45th Birthday, Eric!

  Happy birthday to my husband, Eric!   He turns 45 today.  I am surprising him with tickets to a Miami Dolphins game in Miami.  I got him tickets one other time years ago when we lived in Reno.  We drove to Oakland to see the Dolphins play the Raiders.  I think this will be a great memory for him and a home game too! Happy birthday, babe!

Recipe: Chicken Parmesan

  Chicken Parmesan This is a delicious recipe from Magnolia Table: Volume 2. 2 boneless, skinless chicken breasts  1/4 tsp. kosher salt 1/4 tsp. freshly ground black pepper 2 large eggs 1 tsp. garlic salt 1 sleeve (30-40) buttery crackers, crushed 4 oz. Parmesan cheese, grated (about 1 cup) 2 tbsp. olive oil 1 tsp. fresh lemon juice 1/2 cup mayo 1 tbsp. chopped fresh parsley (optional) Preheat the oven to 400 degrees. (I cut the chicken breasts in half to make thinner.).  Season with salt and pepper. In a medium bowl, whisk together the eggs and garlic salt until combined.  In another bowl, combine the crackers and 1/2 cup of the Parmesan. Dredgs each chicken breast in the egg mixture, then in the cracker mixture, and set the chicken aside on a plate. In a large skillet, heat 1 tbsp of the oil over medium heat.  Add 2 pieces of the chicken and cook until the cracker coating is crispy and golden brown, 3 or 4 minutes on each side.  Remove to a sheet pan or b...
